Negli antipasti di terra ci sono verdure locali o pesci locali freschi a volte pescati direttamente dal proprietario, oppure le panelle di totano. Fra i primi spicca la pasta al fuoco, classico primo piatto della ristorazione di Salina e vari altri tutti molto gustosi.
