β β β β β Without any doubt, the best school to start your gelato journey: I did participate in different webinars and classes with Maestro Presenti, and every time I'm learning modern techniques and new knowledge.
Being in the industry for few years, I can undoubtedly say that this is the best place to learn everything about gelato.

If you are starting from scratch like me or if you want to get specialized, the Gelato Naturale Academy is the place to go !
Courses and practice are so well balanced that after a 5-day training you're not only able to make ice creams and sorbets, but you also get the knowledge of Manuele's balancing systems to create your own flavors.
On top of that, Manuele & Brigitte are such great and kind persons that you feel every day like at home.

β β β β β We would like to thank the experience we had with you, it was incredible, the learning process and the methodology were really meaningful. We connected with dreams, childhood memories and tasteful flavors.
The mix of theory and practice worked well to give us knowledge we can use for a long time and practical experience in producing gelatos, something very important for anyone starting. The manuals are well structured and create a great resource for quick reference after classes, with recipes and key concepts.
We were positively impressed with the creation of recipes based on the countries of the students of our class (Brazil and Greece). Part of the appeal of handcrafted gelato is in the ability to adjust for local ingredients and using Brazilian ingredients and culture made our experience very rich.
But the highlight of the course was the balancing method. We saw an objective way of trying new ingredients and ideas without the need to make all the mistakes, with math orienting us in quantities and ratios.
Manuele shared with us a lot of tips about machines and tools, which helped us build a plan to open our first gelato shop.
Brigitte is very nice and welcoming, bringing beauty and joy to the learning process. I remember how she helped make the process light and natural in my first batches of gelato.
The warmth of the team in offering us our own gelato productions at the end of every day and the opportunity to bring it home for our kids was also very nice.

This is truly an exceptional academy, and both Chef Manuele and Brigitte are two of the most warm and genuine people you will meet! They both welcome you into their academy with open arms, and I felt excited to come in and learn each day.
I spent two weeks at Gelato Naturale Academy, completing the basic and advanced course, vegan course, as well as the specialization course. I can truthfully say that this was time well spent, and an investment worthwhile. This school is not trying to sell you anything equipment-wise, rather Chef Manuele teaches you everything you need to know about making amazing gelato from scratch, using only raw materials. His balancing system is challenging but very effective and I definitely gained the knowledge and confidence to start creating recipes of my own! I went into the school without any previous experience, and I now have so many tools I need to start a career path with gelato alongside my family! Briggite is also so sweet and she always makes sure everybody has everything they need to feel comfortable and happy! I am thankful to both of them and am looking forward to continue growing and learning at their academy!

Course was very well organized , 5 days intense , lots of information Manuelle is not just teaching you the formula of making gelato but opening your mind to the possibilities and your imagination with his knowledge and his experience ! his method is the best for real artisanal italian gelato .For me it was great to experience and to start a new journey with such friendly and very professional environment here at Gelato Naturale Academy i am so so happy to chose this course i will miss them and %100 to talk over a Chaiprinha gelato...

Brigitte and Manuele are beautiful people and doing the course with them was illuminating and fun!
The course we followed was amazingly detailed and full of notions and ideas!

The course is intensive, you learn a lot theoretically and practically. For my taste, it could not be better :)).
