We were excited to dine here based on the reviews. The best part of the meal we’re the amuse Bouche and dessert! The staff was attentive to the point of being intrusive - refilling water glasses after 1 sip. One gets the idea that they are attentive to β€œthe table” not the diners. We were told when we made the reservation and at least 3 times in the restaurant t that absolutely no si storerooms, allergies etc could be accommodated. We got it. The courses were tasty but overtly salted so that by the 3rd course everyone was full just from trying to hydrate. Atmosphere? Cold, impersonal and unwelcoming. We were a tale of 4 and at one point started laughing and felt all eyes of the staff were on us. We are Italian citizens who speak Italian so we knew what was going on. Even a misusing cal feel welcoming- True waste of $$$$ and time ( dinner tops almost 3 hours!). Save yourself!

Absolutely sublime. Service was impeccable, the food was positively sublime (we had the traditional menu) and the selection of wines accompanying the meal were fantastic.

Food and setting was spectacular. Wine selection is outstanding and wine service was among the best I've experienced in Italy, served at exactly the requested temperature, decanted just at the right moment. I think they are well on their way to their Michelin star. Just one word of advice to some of the staff - relax a bit and don't be afraid to joke or have a friendly word with the guests. Fine dining must not be so stiff anymore today, after all, it's not the 80s or 90s. Give your guests a warm welcome and explain a bit more about the philosophy of the restaurant. The food already speaks for itself and with a slightly more personal touch in the service, this restaurant will have a bright future ahead.

Enjoyed a fantastic lunch with my wife at Dimora Ulmo today. We’ve been fortunate enough to eat in many Michelin-starred restaurants in Italy and around the world and Dimore Ulmo was as good if not better than any Michelin one star restaurant we’ve enjoyed. The service was highly professional, impeccable and friendly and the atmosphere, while not exactly casual, was neither unapproachable or stuffy. It felt welcoming. The restaurant only does tasting menus, five or seven courses. We went with the five course and it was exceptional. The owners and chefs are graduates of Massimo Bottura’s Osteria Francescana in Modena and it shows in the attention to detail, texture and taste and of course presentation. We passed a lovely three hours and enjoyed courses, amongst others, of fermented egg in mushroom foam, a beef cheek that is as good as I’ve ever tasted and a tuna tartare in a mandarin gel that was out of this world. Truthfully if this restaurant doesn’t get a star soon that will be a travesty but whether it does or not is nearly irrelevant. Food this good does not need a star to validate it. The wine menu is exceptional and vast. I picked a nice white wine to start that wasn’t in stock and the substitute that was suggested was just as good (perhaps better) and nearly half the price. The red wine was exceptional also as their choice of quality local aglianicos is particularly deep (including some exceptional Fucci’s). Couldn’t recommend this restaurant highly enough. Expensive, yes , but with two nice bottles of wine, a five course tasting menu, amuse bouches and petit fours etc it came in south of €250 for both of us. That is not cheap of course but for the quality of service, ingredients and food and wine, it’s exceptional value for money.

Amazing. One of the best tasting menus I have ever tried & excellent wine pairing. Every dish was amazing. Top 4 from the seven courses menu selected by the chef: - tuna tartare, buffalo cheese cream and tangerine film - squid, green chlorophyl and pickled cauliflowers - salmon trout, coconut, corn sauce - meat balls with spinach Very friendly and professional service (Francesco). Beautifull place. Worth the money. If I should returt to the only restaurant in Matera, it would be this one. Thank you very much!

Beautiful meal with wonderful wine in a stunning location. Wonderful tasting menu and wonderful service. Matera itself is beyond incredible and you shouldn’t need another reason to visit it. However, if you do, this is it.
