Premetto che ho preso il menù "tradizione" quindi acqua cotta viterbese, lombrichelli, maiale e funghi e per finire come dolce una zuppa inglese moderna. Tutto era molto molto buono, impeccabile, un ottimo menù per chi vuole provare la cucina tipica Viterbese ed il prezzo era perfettamente in linea. Mi sono promesso di ritornarci per provare altri piatti meno tradizionali. L'unica consiglio che mi permetto di dare al gestore è quello di migliorare l'ambiente, così come è risulta troppo scarno. Everything was very very good, impeccable, an excellent menu for those who want to try typical Viterbo cuisine and the price was perfectly in line. I promised myself to go back to try other less traditional dishes. The only advice I allow myself to give to the manager is to improve the environment, as it is too sparse.

Un innovazione che, mantiene e rispetta la tradizione culinaria della tuscia, valorizzandone i prodotti. Uno degli aspetti che mi ha colpito maggiormente e mi ha portata a bloggare tutta la cena, è stato l'ingresso al locale: minimal e moderno, con un leggero richiamo al rustico e un ottimo connubio tra i colori, l'arredamento e la mise en place. Non mi sono sentita per nulla catapultata in un luogo freddo e asettico, ma piuttosto in un ambiente curato e accogliente. Ottima la musica di sottofondo che inizia il cliente a uno status di calma e rilassatezza. Fondamentale. Il servizio è oculato, molto professionale, attento ma nello stesso tempo leggero e non invadente. le cameriere sono preparate, sanno consigliare e sono predisposte ad un servizio in piena regola. I tempi di attesa sono giusti. Danilo ci ha condotti dall'inizio alla fine nel suo viaggio mentale e culinario. Gustando i suoi piatti passa la sua filosofia di cucina. I sapori sono bilanciati ottimamente, esplodono al palato, la materia prima è fresca e di stagione. Una vera eccellenza nella città di Viterbo. Sia nel segmento pesce che carne. Si respira l' amore e il rispetto per proprie origini. Un vortice di sapori, di colori, di profumi che ricordano i nostri boschi, i prati, le montagne. Forse questa può sembrare una recensione infantile ed esagerata, ma io queste sensazioni, di fronte a dei piatti, l ho provata poche volte. E poche volte ho trovato tutto questo amore nel crearli e raccontarli. Danilo e il suo staff sono persone piacevoli, ricche, di tutto quello che ci si aspetta quando si va in un ristorante. My first experience in such an establishment was perfect, the service was discrete and attentive and the food wonderful. I really enjoyed the experience of tasting local produce I know so well presented in such a refined and delicate manner. Will definitely return soon
