Piatti sempre nuovi, mai banali, ma legati ad una tradizione importante. Uso perfetto dei condimenti, olio, sughi importanti , ma anche novità come l'uso dei fiori. Ottima la carne, come il maiale nero sabino, ma eccellenti anche i piatti di pesce. Una particolarità, l'anatra cucinata in modo divino. Poi fatevi portare nella grotta, si scende dentro la roccia e si arriva in un luogo dove la temperatura è sempre costante. Lì c'è la cantina ed il vino conservato in questo posto ha un altro sapore.
