Sarà anche una moda del momento ma ormai sono una decina d'anni che imperversa nelle cucine mondiali, quindi non è una ventata passeggera, a me parrebbe più una nuova strada da percorrere.
 Together with Matias Perdomo in Milan and Mauro Colagreco in Menton, Colombian chef Roy Caceres forms a triptych of fusion cuisine that he has contaminated with ingredients that are unusual for us, but which marry our products in a sublime way. It will also be a trend of the moment but it has been raging in world kitchens for about ten years now, so it is not a passing breath, to me it seems more like a new way to go.

While I went to Michellin starred restaurants daily, this venue captured my imagination and affection.
Many years on and we often talk about how amazing our experience was here.
If you're in Rome you MUST visit.
Number #1 in Rome based on my experience.

★ ★ ★ ★ ★ The Metamorfosi has apparently reopened at a new address in Rome on Via Cipro. When I visited this gourmet restaurant in March 2019, then still on Via Giovanni Antonelli, I was simply enthused. I very much hope that there will be another opportunity to visit Metamorfosi.
