La macelleria ha carne buone ma la braceria è un'altra cosa. Saper tagliare il pezzo di carne e saperla cuocere sulla brace fanno la differenza. Qui devono imparare entrambe le cose. La carne al sangue è lessa e dura...l'entrecote sembra una normale fettina di carne e cotta malissimo. Il sapore buono non basta per godersi il tutto. Anyone who follows me in my reviews knows that I'm a realist. Here they are very courteous, quick in service, efficient. The butcher has good meat but the grill is something else. Knowing how to cut the piece of meat and knowing how to cook it on the grill make the difference. Here they have to learn both. The rare meat is boiled and hard ... the entrecote looks like a normal slice of meat and cooked very badly. Good taste is not enough to enjoy it all.

Se posso permettermi darei un consiglio al cuoco: la cottura della carne sulla brace va fatta sui carboni senza fiamma e/o con un leggero strato di cenere. ?
