If there is any American, who has some knowledge and experience eating the best regional food from umbria/marche, this small town restaurant, with reservations!, is a must! I stopped here with my italian friend for lunch, without reservations, and because of my italian friend, they gave us a seat for two, soon after the restaurant opened. The owner, Stefano, treated us like part of the family! Before we left, the place was full, and I saw Stefano turn away several people. You don't order here _ you eat whatever they bring! It's the best regional food I have eaten in this regional! Vegan soups, chicken liver pate, and, in particular, homemade tagliatelle (Not with a machine,but with a knife, tossed in butter and seasoned with fresh truffles. These guys can cook!!!!!! If you are lucky enough to eat here, just sit back and enjoy a totally authentic meal. The tourists will never discover this place. I have been coming to Italy for thirty years, and I rate this place among my top three restaurants.

It was a difficult decision to rate this 3 or 4 stars. Worth a visit if you're nearby for good local food. Very local (with no English spoken) and a lively, very engaged owner. Good food experience as each dish is a surprise, very tasty and with lots of it. Very popular with local Italians and some slightly bewildered-looking tourists. Tried some interesting dishes including a home made chicken liver pate, a local semi-raw pork starter (similar to rilettes), and a tasty lentil soup. Quite a fun spot, although not the most relaxing experience.

This is a great restaurant. It is quite popular and hard to get seat, even with a reservation. The menu, as mentioned by other posts is a fixed price €25 feast. We had 20 different dishes, some small (a scoop of homemade ricotta), and some large ( homemade pasta with truffles). All are delicious. Our feast lasted 3 hours! We even had to pass on a lamb dish as we were to stuffed. The owner and chef is wonderful, along with an exceptional and hardworking staff.

Kind and welcoming. You sit trusting the "oste" ...and you won't regret. Plenty in quantity and quality, fresh truffle and local products is not missing

Really nice and friendly people and environment, a feast of local delicacies from Colfiorito. No a la carte menue, you just have to trust the owners and their good cooking, they'll come around with small portions of local

a really special place one of our favourite restaurants, quirky, informal, wonderful local food. we're vegetarian/vegan and the range is always excellent. well worth the hour's drive from our home.
