Mia madre,coetanea della "Gisa", quella che ha fatto conoscere I maccheroncini, invecchiando, aveva trovato l'alternativa ai "suoi" proprio da Sabina Salvatori. Una chicca da tramandare ai posteri...I veri maccheroncini di Campofilone oltre alle famose 10 uova e la manualita' della sua lavorazione ....la farina 0 o doppio 0, quelli che faceva mia madre e prima ancora nonna Marietta, vietatati per una legge che obbliga l'uso della Semola....A ricordo di mamma Lola e nonna Marietta. ... Il loro è e sarà sempre il "maccheroncino" di Campofilone! The Salvatori family has managed to stop time and to keep the quality standard of their products very high and unchanged over the years: the temptations of trade have not caught on here. Il laboratorio è a vista ed anche se in quel momento non stavano tagliando le due signore mi hanno mostrato la loro maestria . A dimenticavo la cosa più importante, la pasta è buonissima. Genuine product made by hand as it once was. The laboratory is on sight and even if at that moment they were not cutting the two ladies showed me their mastery. La pasta che qui si produce è fatta esclusivamente a mano, dall'impasto alla stesura della sfoglia alla piegatura ed al taglio!!!!! La pasta all'uovo che si produce qui è la più buona pasta del mondo. La pulizia è maniacale (pensate che le uova che usano oltre ad essere freschissime sono trattate disinfettate esono bianchissime proprio perché la lavorazione a mano non permetta trasmissione di batteri). Quando passo sull'autostrada per me è obbligatorio fare una sosta qui e comprare la pasta per me e per molti dei miei amici che me la richiedono sempre !!! Un particolare importante: la pasta ha lunghissimi tempi di conservazione purché non in ambiente umido, ovviamente!!! Una poesia questa pasta e una squisitezza la familiarità dell'accoglienza della titolare !!!! Obbligatorio fermarsi !!!!!! E non scherzo, poi mi ringrazierete !!!! Quadrucci che mio figlio di 5 anni mangia tutto l'anno..davvero squisiti. Consigliatissimo! I go back every year. Scent of homemade pasta as soon as you enter. The old lady and her daughter are an institution! Really special and non-touristy pasta! Quadrucci that my 5 year old son eats all year round .. really delicious. Highly recommended!
