★ ★ ★ ★ ★ Premetto che ho guardato per mia deformazione anche il pelo nell' uovo, a cominciare dal taglio asimmetrico del tataki di tonno, buonissimo però.
Risotto zucca e schiuma di lardo che mancava di sapore, una mantecatura magari un po' più spinta con un giro d' olio al rosmarino, l' avrebbero reso ottimo secondo me. Fegato d' oca con gelatina d' uva buono, ma nel mio modo di pensare a quel piatto, la gelatina doveva essere più dolce e acidula, comunque funzionava Bene. Il dolce era perfetto, cheesecake scomposta al mandarino sul quale avrei messo delle gocce di riduzione di mandarino in giro per il piatto, ma comunque era senza dubbio la portata migliore della serata.

I state that I also looked at the hair in the egg for my deformation, starting with the asymmetrical cut of the tuna tataki, very good though.
Pumpkin risotto and lard foam that lacked flavor, a creaming maybe a little more pushed with a spin of rosemary oil, would have made it excellent in my opinion. Goose liver with grape jelly good, but in my way of thinking about that dish, the jelly had to be sweeter and more sour, however it worked well. The dessert was perfect, tangerine decomposed cheesecake on which I would have put drops of tangerine reduction around the plate, but still it was without a doubt the best course of the evening.
