I nidi del Pastificio Belli sono singolarmente stretti e consistenti. Dalla cottura di due, nonostante la dimensione contenuta, si ricava una porzione piena. Attirano solo a guardarli: da qui il motto della Casa "Se son buoni sono Belli".
Buone paste all'uovo artigianali, se ne trovano in Centro Italia. Ma ottime, qualcuna di meno. Questa convince per la ruvidità conferitale dalla semola di grano duro e per l'assenza di quella…"bava" d'uovo finale che dopo cottura tradisce tante altre paste.

The nests of the Pastificio Belli are singularly narrow and consistent. From cooking two, despite the small size, a full portion is obtained. They only attract you to look at them: hence the House's motto "If they are good they are Beautiful".
Good artisanal egg pasta can be found in Central Italy. But excellent, some less. This convinces for the roughness given to it by the durum wheat semolina and for the absence of that final egg "slime" which after cooking betrays many other pasta.
