A	Alessandro Fiorini on Google ★ ★ ★ ★ ★ Lo strano caso del Rubia Gallega Tramite un amico proprietario di un noto ristorante di Bologna specializzato in carni pregiate, sono riuscito ad acquistare 2,5 kg di filetto Rubia Gallega, un taglio di manzo iberico da 90 € al kg. Preciso che durante la consegna vedo subito un “velo di grasso” che sarà stato di 1-2 etti al massimo. Visto che non sono un macellaio, mi sono affidato a questa macelleria per il taglio in tranci, in modo da avere porzioni da mettere in congelatore e scongelare quando mi sarebbe venuta voglia di mangiarne un pezzo . La sorpresa viene quando dopo una settimana mi viene consegnata la carne . Di filetto me ne arrivano 630 g (seicentotrenta grammi) . A parte mi vengono dati una decina di hamburger fatto “con gli scarti” . Pesando tutto insieme parliamo comunque di 1,8 kg contro i 2,5 kg !!! Questi sono i fatti con bilancia alla mano . Adesso che non mi si venga a dire che il resto era tutto grasso perché quello era già stato considerato . Ieri mi ha proposto una tartare di toro per la quale non trovo le parole. Il luogo ideale per gourmand e per chi predilige la qualità. La genialata è stata quella di abbinare alla macelleria la sala per gli aperitivi con la cucina, che prende la carne direttamente in macelleria... una meraviglia. Il vino è dei migliori e si spazia tra le regioni d'Italia tra vermentini, amaroni e champagne. Il proprietario è un fine conoscitore del bel vivere. Un dandy dei nostri giorni. Carne; abbiamo acquistato vitello cotechino e zampone, superlativi, di unica qualita';visto lo strepitoso successo dei tortellini, e vista la voracita' dei commensali, per il secondo sono stato tra i primi a sedermi a tavola.
