★ ★ ★ ★ ★ A background note: I’ve been making Neopolitan-style pizza for over 30 years. I have both a wood-fired, and a gas-fired oven.
Of course, a pizza should be judged from the bottom up. Their crust was perfect with a great chew. The sauce was delicate and added the right amount of flavor. The Buffalo mozzarella on the Neapolitan was a bit heavy for me, but my personal preference is to go light on the fresh, wet cheese. However, the taste was excellent. The shredded cheese on the second pizza was perfect. Service was good. It was a quiet Friday night.
