B	Biker Alone on Google ★ ★ ★ ★ ★ Spettacolare: Arrivando nel comune di Giurdignano ho preso un numero di telefono attaccato alla porta della proloco che era chiuso nella piazzetta centrale del paese, mi ha risposto una gentilissima signora e dopo aver preso accordi, mi ha guidato a visitare il frantoio ipogeo. Assolutamente imperdibile questa visita, scavato interamente nel tufo racconta la storia rurale del Salento. La sua costruzione risale probabilmente al XVI secolo, un attenta analisi della struttura, ha fatto emergere una scritta che dice appunto 1518. Al frantoio si accede da una scala anche questa in tufo e presenta delle volte a botte. Si presume che in questo edificio ci lavoravano a pieno regime ed a turni 20 persone alla volta H24. Visibile ancora le due enormi macine e la struttura per torchiare le olive. Assolutamente fantastico consiglio vivamente. Le scale in pietra, originarie, sono un poco scivolose e possono creare qualche problema; ma scendere vale davvero la pena, per poter capire l'atmosfera in cui nel 1500, qui sotto, 20 operai a rotazione lavoravano in condizioni di semi-oscurità alla spremitura delle olive. L'intervento di restauro ha permesso la fruizione di questo vasto ambiente, realizzato nel corso del XVI secolo ed in uso fino al XX. Perfettamente conservata è la grande macina, così come gli ambienti in cui dormivano le persone che lavoravano, in condizioni estreme, in turni di 16 ore. Ancora individuabili sono la stalla, i torchi, i pozzi di colatura e persino la cucina, con il tavolo ricavato nella roccia. I ragazzi della Proloco sapranno intrattenervi con la storia, profonda e un po' amara, di questo luogo, fornendovi uno spaccato della civiltà contadina dei secoli scorsi!
