In questo ambiente venivano allevati anche animali come buoi, maiali, animali da cortile ecc. Ed i macellai mettevano in pratica la loro arte e la loro esperienza mettendo poi sul mercato prodotti di una qualità eccellente freschi e lavorati che venivano consumati velocemente perche non erano diffusi i frigoriferi ma solo moscaiole per le abitazioni e ghiacciaio per i negozi. Ecco di questa epoca passata sono rimaste le tradizioni antiche e la qualità dei prodotti offerti ai clienti tutti di Eccellenza, vi segnalo in pieno inverno (lo producono solo in tale periodo) il buristo un classico salume in uso nel senese confezionato in maniera esemplare, ma qualunque prodotto che acquisti è un'opera d'arte di alta macelleria e norcineria.
