R	RS DG on Google ★ ★ ★ ★ ★ Per me la mozzarella fin da bambino è stato un piatto preferito agli altri. A tal punto che qualche anno fa insieme ad un amico stavamo per aprire un caseificio. Detto questo, la mozzarella del caseificio la Cancellese la trovo di un ottimo equilibrio : leggermente grassa quanto basta,salata al punto giusto. Il latte di bufala sprigiona tutte le sue caratteristiche organolettiche appena viene mangiata con persistenza al palato duratura . Devo fare un complimento al curatino che è davvero un maestro . Una delle migliori mozzarelle che abbia mai assaggiato. For me, as a child, mozzarella was a favorite dish for others. So much so that a few years ago together with a friend we were about to open a dairy. That said, I find the Cancellese mozzarella in the cheese factory to be very well balanced: slightly oily enough, salted to the right point. Buffalo milk releases all its organoleptic characteristics as soon as it is eaten with lasting persistence on the palate. I have to pay a compliment to the curator who is really a master. One of the best mozzarella I've ever tasted.
