We only went to this boutique hotel for dinner. Albeit the menu was really short, food was excellent and well worth a visit. The sommelier made us try two different rosé sparkling wines, and she was absolutely right in her advise as they perfectly matched the food we ate. On a closing note, the Tiramisu was pretty remarkable. Well done

Absolutely loved our stay here. The best meals we had in all of Puglia and the hotel is beautifully styled (and incredibly comfortable). Great pool to spend time during the 100+ degree days and right in the center of Ostuni for exploring at night. Staff was fantastic as well and really made us feel welcome.

This is the nicest hotel in all of Puglia. The attention to detail is remarkable. The owners and staff are incredibly caring and made our stay in Ostuni one of the most memorable of any travel. The restaurant and bar have world class food and drinks. Even if you don’t stay in the hotel, do yourself a favor and go for drinks, lunch, dinner or brunch. All were simply outstanding. I can’t wait to go back.

Every part of our experience was fabulous. The attention to detail for everything was impeccable. The staff were excellent throughout! By far the best hotel we have ever stayed at, we will for sure be back. The breakfast was heaven - the setting, the service and the menu! We did the 3 course tasting menu for dinner and it was fabulous - the kitchen are extremely talented! If you get the chance treat yourself to the spa - the staff are brilliant!

What a lovely place! Really loved our stay here. This is the epitome of a homey boutique hotel. Incredible, warm service. Beautiful outdoor and pool area. And top notch food. Some of the decor is a little quirky and there are some minor inconveniences about some rooms (e.g. some don’t have doors to the bathroom), but overall we really loved our stay. In fact, we split our time in Puglia between Paragon 700 and Borgo Egnazia, a much old, fancier and more expensive property. In many respects we preferred Paragon, in particular because of the warmth of service—the staff really make you feel at home.

I have been there only for an aperitivo. My choise gin and tonic. My guest Spritz. Tonic was well known but gin, suggested by the water, was a pugliese production, alternative to the original. Could spot the difference but was an appreciated alternative. Some difference at First drop but consistent in the mouth at the end. I appreciated. I had a look to the dinner menù and noticed few interesting offering, Will return.

Everything about our experience at Paragon 700 was top notch. From the moment they greet you at the door to your goodbye, they treat you like very special guests. We booked spa packages complete with a private yoga class, massages, and facials. Everything was perfection. The restaurant in the hotel was amazing. We had a wellness lunch + two dinners at the restaurant. This isn't something we normally do when we travel because we love to explore local spots, but the weather was cold and rainy that week so we opted to eat at the hotel rather than get drenched. We have no regrets. The chefs are so creative and the food was absolutely amazing. We also love tasting creative cocktails and the bar met all of our expectations. The mixologists started to catch on to our preferences and made spot on suggestions for custom cocktails as the week went on. We both had to attend video calls for our job and I can with full confidence that the wifi was always strong. The downstairs lounge was a chill place to quietly sip cappuccinos in the morning while catching up on work. Which brings me to the decor. They leverage the old world charm of the building while pairing it with modern luxurious decor. We were so happy with our decision to stay at Paragon - it was completely worth it!

Absolutely gorgeous in every way, and although expensive, worth every penny. The staff are friendly but not overbearing, helpful but don’t infringe on your privacy. The food (breakfast, dinner, cocktails, snacks) is top quality and appropriate portion sizes. The rooms are immaculate and tastefully decorated. The light strikes the grounds in just the right way at the right times of day. Spa is totally worthwhile - you forget about the outside world - it has been done so carefully and the staff are very gentle when you are in their sacred space. Could easily stay in the hotel for the whole week, it has everything we need!
