Generell muss man über Volterra sagen, dass es klein aber fein und sehr zu empfehlen ist. Nicht nur dass die Landschaft rundum traumhaft schöne Toskanabilder in den Abendstunden liefert, die Menschen sind sehr zugänglich und bemüht, sprechen fast durchgängig englisch und recht viele auch ein paar Brocken deutsch. Zwar gibt es eine Unzahl an Lebensmittel und Paninishops, Osterias mit Spezialitätenverkauf, aber eines fiel uns ganz besonders auf. Das Sapori in Corso. Nicht nur, dass hier statt Schinken in aller Art, der Käse im Vordergrund steht, der junge Mitarbeiter war auch äusserst bemüht, sprach sehr gutes Englisch und schien sich sowohl bei Käse, Schinken aber auch teuren Weinen extrem gut auszukennen. Wichtiges Thema ist hier natürlich auch die Trüffel. Die obligaten Verkostungsproben sind klein gehalten, was mir gut gefiel, weil sehr wertschätzend. Auf der Suche nach einer Alternative zu Pecorino, Grana und Parmesan empfahl er mir einen Trüffelhartkäse. Dieser war nicht so lange gereift wie wir das vom Grana kennen, trotzdem aber fest genug um frisch gehobelt zu werden. Sehr feuin waren auch die vorgestellten Öle. Zwar führen sie auch Pasta, aber da hatten wir selbe Produkte schon in Kaufhausketten zu sehr viel niedrigeren Preisen gesehen. Trotzdem gab er uns Auskunft über die Kochzeiten und worauf es bei der Zubereitung an kommt. Letztendlich ahben wir auch noch ein Panini mitgenommen und gleich verspeist. Obwohl wir sonst fast alles fotografieren, davon gibts kein Bild. Ein untrügerisches Zeichen wie gut es war oder aber wie hungrig wir waren. *lach* Ich denke, in Volterra ist das Sapori kein Geheimtipp. Das ist schon Volterra selbst. Wenn auch weniger geheim als Tip.

An important topic here is of course the truffle. The obligatory tasting samples are kept small, which I liked very much, because very appreciative. In search of an alternative to Pecorino, Grana and Parmesan he recommended me a truffle hard cheese. This had not ripened as long as we know the Grana, but still strong enough to be freshly planed. Very feuin were also the oils presented. Although they also carry pasta, but we had seen the same products in department store chains at much lower prices. Nevertheless, he gave us information about the cooking times and what is involved in the preparation. Finally, we also took a panini and eaten right away. Although we usually take pictures of almost everything, there is no picture of that. A telltale sign of how good it was or how hungry we were. * Laughs * I think, in Volterra the Sapori is not an insider tip. That's already Volterra itself. If less secret than Tip.

Ottima tappa per chi vuole approviggionarsi di prodotti locali(conserve, paste tipiche,oli, vini etc..) e soprattutto formaggi!! Vastissima scelta di pecorino di vari gusti e stagionatura. Si può chiedere il confezionamento in sottovuoto al momento, sia di salumi che formaggi. Molto consigliato ??
Excellent stop for those who want to procure local products (preserves, typical pastas, oils, wines etc ..) and especially cheeses !! Vast choice of pecorino cheese of various flavors and maturation. You can ask for vacuum packaging at the moment, both of meats and cheeses. Very recommended ??

We bought for 23 Euros food and tried some of the offered salami on the counter. The guy there began to shout we should stop this, this would not be our dinner and put the plate of offered testing salamis behind the counter... In fact we could have eaten testing salami in the worth of 0,30 cent... When this will ruin him, my sympathie. Unbelievable unfriendly and stupid behaviour. Would never step in this shop again. Next to it is a supermarket which offers ham and cheese in same quality to lower prices. Sapori in corso is not recommendable!

Best tastes (Sapori) in Italy, you have the option to have a menu inside before you decide to buy something. The prices are decent for having lunch in the center of Volterra

This place is a shop and a restaurant. The tables are a bit hidden in the back, so don't give up when you walk by. The products being served are also for sale in their shop out front. A huge Salumi and Cheese selection (try the Pear or Truffle Pecorino). Besided huge Paninis for 5 Euros each they serve amazing cold plates here. Regular ones with Salumi and Cheese, then the same but with boar and truffle or an all truffle cheese and meat plate. We went for the All Truffle Plate. And what an explosion of flavour that was. Great cheeses topped with Truffle honey. Truffle Mortadella and Salami. Bread with funghi/truffle topping, Truffle Porchetta etc. All products and ingredients were fantastic and far away from mass production. Nicely presented and fair priced for what you get. Staff was friendly and helpful. We also had two glasses of White Wine with. Local wine. They got a good selection. Be sure to bring some of their products home. And our dog was very welcome here as well!
