★ ★ ★ ★ ★ Leggendo le recensioni positive, soprattutto sugli speck, mi rendo conto che il trattamento ricevuto è stato riservato a noi. Non so perché ha deciso di tirarci la sola ma Vabbè, si vede che gli stavamo antipatici. Ci ha venduto un prezzo di speck con un "pezzetto di osso" ad un prezzo assurdamente esorbitante dove il pezzetto di osso era alla fine un'intera costola più un pezzo di midollo. A me sembrava un pezzo di bacino e spina dorsale, tanto era grande. Metà dello speck era osso, l'altra metà, per riuscire a staccarlo, erano pezzetti quasi immangiabili. Il grasso esterno bello giallo.
Sui formaggi ci siamo trovati benissimo ma solo speck una fregatura come poche chi erano capitate.
Con tutte le possibilità là intorno dubito che torneremo.
 Reading the positive reviews, especially on speck, I realize that the treatment received was reserved for us. ★ ★ ★ ★ ★ Inaspettatamente, l'esperienza gastronomica più bella dell'altopiano di Siusi. Seguendo il percorso che da Fiè porta ai laghetti, noto l'indicazione del Salmsein Biohof. Telefono, chiedo la disponibilità per un pranzo veloce post escursione e, dopo che la voce al telefono mi ha avvisato che avrebbe potuto soltanto prepararmi speck e formaggio, porto su sua indicazione la macchina al maso. Di lì si dipana il sentiero per i laghetti (molto bello, soprattutto la prima parte lontana dalla massa di turisti). Al rientro, è stata l'apoteosi, senza esagerazioni. Panorama, clima, profumi e ambiente da paradiso. Martin ci ha completamente viziato con tagliere di speck in diverse stagionature e tagli, formaggi vaccini e caprini, una bottiglia di vernaccia genuina e gradevolissima, pane e focaccia. Il piatto di apertura è stato un superbo spezzatino di manzo con cipolle, carote e polenta. Il tagliere era accompagnato da erba cipollina, origano fresco e fiori, il tutto raccolto al momento. Credo di aver mangiato anche i fiori :). Caffè bio molto lungo che, seppur assolutamente distante dal mio canone campano, era ugualmente molto buono. Assaggio di grappa e passeggiata digestiva nei campi coltivati ad erba medica.

Unexpectedly, the most beautiful gastronomic experience of the Siusi plateau. Following the path that leads from Fiè to the lakes, I note the indication of the Salmsein Biohof. On the phone, I ask for availability for a quick post-excursion lunch and, after the voice on the phone advised me that he could only prepare me speck and cheese, I bring the car to the farm on his instructions. From there the path to the lakes unfolds (very nice, especially the first part far from the mass of tourists). Upon returning, it was the apotheosis, without exaggeration. Panorama, climate, perfumes and paradise environment. Martin completely spoiled us with speck cutting board in different seasonings and cuts, cow and goat cheeses, a bottle of genuine and pleasant vernaccia, bread and focaccia. The opening dish was a superb beef stew with onions, carrots and polenta. The chopping board was accompanied by chives, fresh oregano and flowers, all collected at the time. I think I also ate the flowers :). Very long organic coffee that, although absolutely far from my Campania canon, was equally very good. Grappa tasting and digestive walk in alfalfa fields.

★ ★ ★ ★ ★ Wenn man die richtige Straße gefunden hat, die sich den Berg hinauf zieht, fährt man an ein paar Häusern vorbei weiter bergauf durch einen kleinen Wald und wenn man denkt, es kann eigentlich nix mehr kommen, dann öffnet sich das Wäldchen urplötzlich und gibt den Blick frei auf ein Panorama von Almwiesen und Bergen wie gemalt und mittendrin am Ende der Straße steht dann alter wunderschöner Hof, der Salmsein Hof. Schon allein die Anfahrt und die Lage allein ist unvergleichlich und die Wärme, Freundlichkeit und Gastfreundschaft von Martin und Traudi Kritzinger sucht seinesgleichen. Wir, unsere zwei Jungs (11 und 14) und meine Schwiegermutter verbrachten eine viel zu kurze und unvergessliche Woche an diesem wunderschönen, genossen die großartigen Produkte vom Hofladen, die gemütlichen Appartements mit dem großartigen Blick, den Badesee, die wunderschönen Wanderungen und Hütten mit Wanderwegen direkt vom Hof aus und die unvergleichliche warmherzige Gastfreundschaft der Familie, die uns mit einer Selbstverständlichkeit integrierten und uns, bzw. die Jungs jederzeit mithelfen ließen. Vielen Dank für diese wunderschönen Tage, es war uns ein Fest!!! Eure Sabine, Jörg, Steffi. Benni und Jakob
When you have found the right road that runs up the mountain, you drive past a few houses further uphill through a small forest and when you think nothing can come, then the little forest suddenly opens up and gives you a view free on a panorama of alpine meadows and mountains as if painted and right in the middle at the end of the street there is a beautiful old farm, the Salmsein farm. The journey and the location alone is incomparable and the warmth, friendliness and hospitality of Martin and Traudi Kritzinger is unparalleled. We, our two boys (11 and 14) and my mother-in-law spent a much too short and unforgettable week on this beautiful, enjoyed the great products from the farm shop, the cozy apartments with the great view, the lake, the beautiful hikes and huts with hiking trails directly from the farm and the incomparable warm-hearted hospitality of the family, who integrated us as a matter of course and let us and the boys help at any time. ★ ★ ★ ★ ★ Wunderschöner Hof mit Ferienappartements in historischem (16. Jhd.) und toll eingerichtetem Ambiente. Freundliche Menschen, toller Service, Hofladen, viele Tiere und zwei muntere, liebenswerte Wachhunde zum Schutz der Schafe. Der Hofweiher ist das absolute Highlight für die Kinder.
Beautiful farm with holiday apartments in a historic (16th century) and beautifully furnished ambience. Friendly people, great service, farm shop, lots of animals and two lively, lovable guard dogs to protect the sheep. The Hofweiher is the absolute highlight for the children.

Die Gastgeber Martin und Traudi sind sehr freundlich und haben sich ums Wohl der Gäste gekümmert. In unserem Appartement war alles was man brauchte. Was besonders schön war, war der alte Küchenherd mit dem man zusätzlich heizen, kochen und Brötchen aufbacken konnte und der schöne Holzboden.
Der Hof ist genau zwischen Seis und Völs gelegen. Wir waren zum Langlaufen auf der Seiseralm. Wunderschön.
Wir kommen bestimmt wieder.
We felt comfortable from the first moment.
The hosts Martin and Traudi are very friendly and take care of the well-being of the guests. In our apartment was everything you needed. What was particularly nice was the old kitchen stove with which you could also heat, cook and bake rolls and the beautiful wooden floor.
The farm is located exactly between Seis and Völs. We went cross-country skiing on the Alpe di Siusi. Beautiful.
We'll definitely be back.

L'ospitalità franca e generosa di Martin e della sua famiglia è stata la ciliegina su una torta fatta di prati verdi e fioriti, montagne stupende e giornate di sole cristallino.
South Tyrolean Maso Spartan but complete with everything, excellent local products that can be purchased on site, including organic meat, cheese, cold cuts, milk, beer and wine.
The frank and generous hospitality of Martin and his family was the icing on a cake made of green and flowery meadows, beautiful mountains and crystal clear sunny days.

für eine Woche auf dem Biohof... Unser Aufenthalt war einfach wunderschön... Der richtige Ort, um den Stress hinter sich zu lassen und sich auf das wesentliche zu reduzieren. Die Umgebung, die Tiere, der zum Hof gehörende Badesee, einfach Natur pur. Wir sind 110 km gewandert und das direkt ab dem Biobauernhof. Grundsätzlich ist
hier Selbstversorgung, aber der hofeigene Bioladen ist sehr gut bestückt und Traudl und Martin stehen mit Rat und Tat immer gerne zur Verfügung. Wir fühlten uns wie in einer großen Familie. Wir kamen als Fremde und haben Freunde gefunden. Dies war sicherlich nicht unser letzter Aufenthalt.
Were at the end of April 2022
for a week on the organic farm... Our stay was simply wonderful... The right place to leave the stress behind and to reduce to the essentials. The environment, the animals, the bathing lake belonging to the farm, simply pure nature. We hiked 110 km directly from the organic farm. Basically is
Self-sufficiency here, but the farm's organic shop is very well stocked and Traudl and Martin are always happy to help and advise. We felt like in a big family. We came as strangers and we made friends. This was certainly not our last stay.
