Impasto lievitato 48 ore, gustosa e leggerissima, vastissima la scelta di pizze rosse, bianche e speciali, ottima birra. Titolari e collaboratori squisitamente gentili. Ogni volta che vengo a Perugia non posso mancare questo appuntamento. Consigliatissima!! Exceptional pizza made by an equally exceptional master Pizzaiolo, Francesco. 48 hour leavened dough, tasty and very light, huge choice of red, white and special pizzas, excellent beer. Exquisitely kind owners and collaborators. Every time I come to Perugia I cannot miss this appointment. Highly recommended !!

La pizza rossa Francescana (con pomodoro) assaggiandola risulta aspra come se il pomodoro fosse preso dal barattolo e messo sopra l'impasto, il prosciutto e i funghi sono veramente il minimo possibile. La pizza Riccardo (bianca) risulta con più appetitosa, ma anche in questo caso la quantità dei condimenti messi a guarnizione è insufficiente per esprimere un commento positivo. Ho aspettato prima di modificare la mia recensione infatti già circa un mese fa avevo preso due pizze e mi era sembrato che la qualità fosse molto scaduta rispetto al passato, ma prima di esprimere un valore così negativo ho voluto fare un altro tentativo per dare una seconda possibilità a chi lavora qui. Decisamente insoddisfatto, da non metterci più piede. Just took two takeaway pizzas taking advantage of the fact that I live 100 meters away. The quality of the pizzas is no longer the same as it used to be. The Franciscan red pizza (with tomato) when tasting it is sour as if the tomato was taken from the jar and put on top of the dough, the ham and mushrooms are really the minimum possible. The Riccardo pizza (white) is more appetizing, but even in this case the quantity of toppings used as a garnish is insufficient to express a positive comment. I waited before changing my review in fact already about a month ago I had taken two pizzas and it seemed to me that the quality was very poor compared to the past, but before expressing such a negative value I wanted to make another attempt to give a second one possibility for those who work here. Definitely dissatisfied, not to set foot on it anymore.
