La lavorazione delle materie prime segue la tradizione del forno. Sono impiegate farine di provenienza locale. Lo stesso si può dire per olio d'oliva ed altri ingredienti. Il pane toscano è affascinante. La schiacciata è unica nella sua bontà e delicatezza. Seguono la pizza con tutte le sue varianti, che fa compagnia nell'esposizione alle varianti della schiacciata. Per esempio pizza con i funghi e schiacciata con le cipolle, pizza con olive origano e carciofi e schiacciata con le patate. Dipende dal momento e dalla fantasia del fornaio, che è anche il limite praticamente infinito alle versioni. Sono un cliente di vecchia data, ma ogni volta trovo eccezionale il pane semi integrale, buonissimo il pane integrale. Io ho assaggiato una torta della nonna straordinaria e delle frittelle ripiene di crema. Vale la pena fare un po' di coda...
