★ ★ ★ ★ ★ Andrea è davvero un Maestro Norcino come non ne trovi più, con la tradizione e la fantasia di lavorare ancora con processi lenti come si deve tutti i prodotti che produce personalmente nel laboratorio: guanciali, lonze, salsicce variegate asciugate e morbide, ci trovo poi tutta la sua disponibilità per qualsiasi richiesta su misura: costine intere, colli o prosciutti disossati per i pulled, o per le lunghe cotture.... e le salsicce fresche che sono una meraviglia..... come la Coppa di testa all arancia....
Andrea is really a norcino master as you can't find any more, with tradition and imagination to work again with slow processes as you owe all the products that personally produces in the laboratory: pillows, Lonze, Dry and soft variegated sausages, then I find everything Its availability for any tailored request: whole ribs, packages or boneless hams for the pulled, or for long cooking .... and fresh sausages that are a marvel ..... like the orange head cup. ...
