β β β β β Going to Hashimoto itβs like traveling to authentic Japan itself in the blink of an eye while staying in Rimini. Forget being at a classic European sushi restaurant, here the friendly and ironic Chef Yutaka Hashimoto offers only two types of Menus (βSushi Non per Tuttiβ and βRamen Maniacaleβ) where you get treated with Gyoza, Aburi and Ramen of the highest quality. Kikusui sake will pair most dishes. The Hashimoto method is also clearly stated: BROTH: beef, chicken, capon, tuna, salmon, herring, sea bream, shrimp; katsuobushi, bottarga, seaweed kombu, mushrooms, onion, ginger, carrots, potatoes, fruit and various spices. Cooked at least 30 hours (record of continuously cooked dishes 240 h in November 2020). NO Tonkotsu (pork bone) because too intrusive and heavy in taste and to digest. PASTA: mix of 5 flours, kneaded
by hand. CHASHU (roast): bacon of
pork marinated and cooked at low temperature. I loved finding such a pure and rare Japanese restaurant. We had βRamen Maniacaleβ menu (28β¬), Sparkling Water 0.75l (2β¬), Kikusui can 200cl (10β¬) and βDuro-Duroβ (3β¬), ginger liqueur that according to the funny host will have a pleasant side effect for a happy ending evening.
