Devo dire che rispetto alle farine di farro commerciali che si trovano al supermercato la differenza è abissale. La farina di Farro Monococco da cotta ha una colorazione beige ed emana un ampio bouquet di profumi che ricorda i cibi genuini di una volta. Inoltre è molto più digeribile e saziante rispetto alle comuni farine in commercio che di fatto alzano di più la glicemia.
