È nel senso che li fanno fare ad un laboratorio artigianale (e sono molto buoni) che poi vengono abbattuti per la conservazione.

 On the menu the first courses are artisanal but frozen.
It is in the sense that they make them in an artisan workshop (and they are very good) that they are then cut down for conservation.
