Consiglia di consumare la farina entro 90 dalla molitura, che fa capire la freschezza della sua origine. Danno anche indicazioni su come usare la farina per la pizza, dove assolutamente consigliano una lunga lievitazione per poterla apprezzare al meglio. Se siete in zona fare una deviazione è consigliato.
