Se la acquisti e fai "la prova del palato", ti rendi conto che si tratta di carne di animali allevati a pascolo libero a mezza montagna.
Il sughetto che si produce in cottura infatti
non è acquoso e insipido come quello delle
carni della grande distribuzione, bensì saporoso ed abbondante al punto da garantire a fine cottura un piatto morbido e gustoso.
