★ ★ ★ ★ ★ Ho richiesto a Danilo un pezzo di pancia di maiale con cotenna, peraltro con poco tempo di preavviso. L'idea era di cuocerla a mo di porchetta in kettle a cottura indiretta. La carne che mi ha fornito mi é parsa subito di ottima qualità, oltretutto proprio il taglio che io cercavo, ossia dalla parte delle costine e non della pancia. Danilo mi ha detto provenire da un allevamento dove i maiali sono allevati allo stato semi brado. Risultato eccezionale, carne che si scioglieva pur mantenendo la sua struttura e cotenna che scrocchiava. 5 stelle ampiamente meritate.
I asked Danilo for a piece of pork belly with rind, moreover with little notice. The idea was to cook it like porchetta in an indirect-cooked kettle. The meat he supplied me immediately seemed of excellent quality, plus the cut I was looking for, that is, on the side of the ribs and not the belly. Danilo told me to come from a farm where pigs are raised in the semi-wild state. Exceptional result, meat that melted while maintaining its structure and rind crackling. 5 stars widely deserved.

Ero in cerca di un taglio speciale e dopo una piacevole chiacchierata su razze, tipologie di frollatura e stili di cottura, siamo arrivati a Gutrei, razza Otras, una galiziana di 15 anni e frollata alla perfezione. Una delizia in Reverse. Grazie per il consiglio ragazzi, alla prossima!
Welcoming staff and as always super helpful. The neighborhood butcher that makes the difference, a certainty in Parma. I was looking for a special cut and after a pleasant chat about breeds, types of maturation and cooking styles, we arrived at Gutrei, the Otras breed, a 15-year-old Galician aged to perfection. A delight in Reverse. Thanks for the advice guys, see you next time!
