★ ★ ★ ★ ★ Carni eccelse lontanissime dall'impoverimento qualitativo e palatale alle quali le lobby della grande distribuzione ci hanno abituati.
Ma per chi vuole non solo accontentare il palato ma pensare anche alla salute, questo negozio, di via Bologna 90 (16127 Genova), è la sosta obbligata.
Il centro commerciale superorganizzato ogni mese tira una linea e calcola il profitto, che sopraffà la filosofia dell'intima passione dei plus qualitativi, basta che il prodotto stia a forza nei limiti di legge e faccia guadagnare, il resto non importa.
Ma questo perché forte della spersonalizzazione, ossia manca un volto diretto che rappresenti il negozio ed il prodotto, perché manca la responsabilità di un "bottegaio" dietro il banco con un nome e cognome, e perché mancano l'entusiasmo e l'interesse per perorare uno smercio che sia glorioso e non provochi danni alla salute, che non provenga da allevamenti intensivi o provenienze occulte e che possa fare la differenza.
Questa macelleria, per l'appunto, controlla tutta la filiera, dall'origine all'alimentazione delle bestie, nondimeno libere di pascolare, e vende solo fassona piemontese, carne esposta e tagliata al momento.
La carne qui ha un costo, ma è più che legittimato, e ricordiamoci che per guadagnare in qualità, lo si può fare comprando meno e meglio.
Credo che acquistare carne in questa macelleria non sia solo una questione di consistenza, colori e gusto, ma sia una scelta intelligente che apporterà un guadagno in benefici.
Solo un'aggiunta importante, a proposito di macellerie che vendono bestie libere con alimentazione naturale: cercate CLA in rete (acronimo di acido linoleico coniugato).
