La qualità è molto buona, però l'accoglienza lascia a desiderare per via del ragazzo al banco che di fronte alla mia insistenza sul sapere i prezzi o di fronte alla mia indecisione del momento era schizzato nel retrobottega borbottando qualcosa nella sua lingua, però con fare visibilmente alterato il che lasciava intendere che mi inveiva contro. Consiglio vivamente, ma moderare come ci si pone con la clientela. I state that it is the first time I went to them after our neighbors who take the meat from them recommended it to us. Peccato che io abbia preso un costato di black angus in frollatura da 80gg e il macellaio (forse inesperto..) non abbia eliminato la parte esterna della costata (quindi la parte inscurita dall'aria..). Non mi è stato mostrato ciò che era stato tagliato quindi me ne sono accorto solo una volta arrivato a casa e aperto la confezione.. La parte all'aria nella carne frollata và eliminata perchè risulta scura ed amara al gusto. Un vero peccato.. Evidentemente ho sbagliato a dare per scontato che fosse stata effettuata la pulizia prima di impacchettare tutto.. Excellent butcher, excellent frollature. Approfitto anche per smentire una recensione da due stelle che dice che ha comprato carne frollata senza che la "parte scura" venisse rimossa ; faccio notare a questa persona e a tutti coloro che pensano che quello che dice sia vero, che la parte di cui parlava il signore, non è la crosta che si forma sull'esterno del lombo che è dura, pericolosa da ingerire e VA RIMOSSA, ma di un inscurimento che avviene sotto temperatura controllata che non è affatto dannoso, non è amaro, ed è anzi molto spesso un valore aggiunto al sapore ed alla reazione di Mallard che si andrà a formare (in gergo crosta). Questa persona tra l'altro è una local guide e mi sembra assurdo che per ignoranza si debba infangare una macelleria di tutto rispetto. Aggiungo che se per gusto personale si vuole rimuovere quella parte più scura che si crea dopo pochi giorni in frigo, si sta attenti al momento e nel caso si chiede di farlo, PAGANDO anche lo scarto ovviamente, dato che non è affatto previsto, al contrario di ciò che dice quest'uomo, che quella parte venga rimossa ergo non è dovuto lo sconto di prezzo, perché per loro è una perdita non necessaria. Detto ciò vi consiglio assolutamente la macelleria e vi invito a informarvi a fondo quando una persona dà un giudizio negativo non sapendo nulla in materia The aged meat is of extreme quality and has a quality / price ratio that cannot be found in the area.
