Al suo interno sono dislocate le classe del biennio (prime e seconde) ad eccezione di quelle dei corsi U e V che sono presso la sede Apicella in corso Fornari 1. La struttura ha all'interno diversi laboratori di cucina, sale, bar, una reception ed un paio di aule di informatica. I rari interventi di manutenzione della struttura rendono l'aspetto, in particolar modo quello esterno, alquanto "trasandato", decisamente in contrapposizione con l'ottimo personale che vi lavora. Recentemente la Provincia di Bari ha iniziato ad effettuare delle opere di ristrutturazione. Numerosi e ben organizzati i laboratori per le esercitazioni.
