★ ★ ★ ★ ★ La pizzeria "I Borboni" di Valerio Iessi e Daniele Ferrara per me rientra ufficialmente tra le migliori pizzerie mai provate.
Partiamo subito col dire che la mia opinione è basata su tutto quello che fa da contorno e non solo sulla pizza.
Infatti la prima grande nota positiva va alla modalità di accesso e prenotazione: puoi fare tutto online tramite il loro sito, quindi non vedrete mai enormi file all'esterno di gente ammassata che litiga per chi deve entrare e per chi sta aspettando da ore ed ore. Questo per me già è un grandissimo valore aggiunto che molti sottovalutano.
La location si presenta davvero bella, elegante e curata in ogni minimo dettaglio. Le pizze sono state la "ciliegina sulla torta" perchè sono state davvero eccezionali: ingredienti studiati e bilanciati, non messi li a caso senza un perchè. L'impasto è di una leggerezza unica. Abbiamo mangiato 5 pizze in 3 persone...e questo la dice davvero lunga.
Un'altra nota positiva è stata lo staff ed il servizio: una pizzeria di altissimo livello ovviamente doveva avere uno staff di altissimo livello. Solari, gentili, professionali e soprattutto attenti. Ci hanno cambiato piatti e posate per ogni pizza diversa mangiata (potrebbe sembrare una cosa ovvia e scontata ma vi posso garantire che neanche tra i primi 3 della 50 best mi è capitata una cosa simile).
In conclusione: ho provato in tutti i modi a trovare un difetto ma non l'ho trovato

 The pizzeria "I Borboni" of Valerio Iessi and Daniele Ferrara for me is officially one of the best pizzerias ever tried.
Let's start by saying that my opinion is based on everything that serves as a side dish and not just on pizza.
In fact, the first big positive note goes to the access and booking methods: you can do everything online through their website, so you will never see huge queues outside with crowded people fighting over who has to enter and who has been waiting for hours and hours. . For me this is already a great added value that many underestimate.
The location looks really beautiful, elegant and with attention to every detail. The pizzas were the "icing on the cake" because they were truly exceptional: studied and balanced ingredients, not randomly placed there without a reason. The dough is of a unique lightness. We ate 5 pizzas in 3 people ... and that says a lot.
Another positive note was the staff and the service: a very high level pizzeria obviously had to have a very high level staff. Solar, kind, professional and above all attentive. They changed plates and cutlery for each different pizza we ate (it might seem obvious and obvious but I can guarantee you that not even in the top 3 of the 50 best has such a thing happened).
In conclusion: I have tried in every way to find a defect but I have not found it

★ ★ ★ ★ ★ Really nice place. The pizza was really good and didn't make me completely full. I gave it 4 stars because there were some of the ingredients on the pizza that I could not taste, so it was like they were there just to add some fancy stuff, but as I said overall it was really good. The service was nice and professional. The price was not that high considering the concept of Pizzeria that they are trying to make, and to my opinion succeed in this.
