Prodotti stagionali, materie prime ottime e una lievitazione naturale. Oltre alle classiche ho provato quella con patate, limone candito, olive e guanciale..... buona, buona, buona ?. E sono anche gentili. Ecco cosa riporta il loro volantino: "Partendo da una farina di ottima qualità con un alto contenuto proteico, riusciamo a creare un prodotto ad alta digeribilità frutto di una maturazione fino a 120 ore. Dedicando molta attenzione alla stagionalità dei prodotti ed alle eccellenze del nostro territorio. No OGM, no surgelati, no grassi animali aggiunti" Superlative. Absolutely not to be missed. Discovered by chance during a return trip to Rome, this small pizzeria is a joy for the palate. Seasonal products, excellent raw materials and a natural leavening. In addition to the classics I tried the one with potatoes, candied lemon, olives and bacon ..... good, good, good ?. And they are also kind. Data l'ovvia elevata affluenza, vi consiglio di prenotare prima telefonicamente le vostre pizze. Good pizza, varied and also well digestible (which is not at all obvious), adequate prices. Given the obvious high turnout, I recommend that you book your pizzas first by phone.

Cmq sempre raccomandatissima. Definitely exceptional dough; with the "passing of time, prices have risen in a bit and the pizza, although always excellent, has lost a little on the topping that was richer at first. Anyway, always highly recommended.
