 Superfine filled pasta made according to the Emilian tradition. And then the courtesy and the wonderful Bolognese accent. I recommend it to everybody.

Dopo 6 minuti che bollivano i bordi erano ancora durissimi e, una decina i tortelli, si sono riempiti di acqua col risultato di un brodino caldo di acqua salata nel piatto. Se ripasso di lì tiro dritto.
I'm sorry to be against the tide, but the potato tortelli (30pcs) taken on Tuesday 7 September were disappointing. After 6 minutes of boiling the edges were still very hard and about ten tortelli were filled with water resulting in a hot broth of salted water on the plate. If I go back from there I go straight.
