Sono grotte sotterranee scavate nel tufo, o in una specie di pietra calcarea più o meno dura detta "pietra leccese". La loro costruzione avvenne dall'XI-XIII secolo sino agli inizi del XVIII secolo. Oltre il basso costo di costruzione di un trappeto, il motivo che spinse a lavorare in un opificio sotterraneo era quello di ottimizzare la conservazione del prodotto in un ambiente dalla temperatura constante. Sono in disuso da molti anni ma sono molto interessanti da visitare e, possibilmente informarsi prima o farsi spiegare il funzionamento e la vita che conducevano i "trappetari", ossia gli operai che lavorano, mangiavano e dormivano chiusi dentro per tutta la stagione della spremitura delle olive. Quello di Melpignano è uno dei tanti frantoi ipogei che si trovano nel salento. The trappeto, or underground oil mill was used for the grinding and production of olive oil. They are underground caves dug into the tuff, or into a kind of more or less hard limestone called "Lecce stone". Their construction took place from the 11th-13th century until the early 18th century. Besides the low cost of building a mill, the reason that led to work in an underground factory was to optimize the preservation of the product in a constant temperature environment. They have been out of use for many years but they are very interesting to visit and, possibly inquire in advance or have an explanation of how the "trappetari", that is the workers who work, ate and slept closed inside for the whole squeezing season of the olives. That of Melpignano is one of the many underground oil mills found in Salento.
