★ ★ ★ ★ ★ Con i Bizantini nel IX secolo, l’economia e il commercio dell’olio prese il posto di quella del grano, perciò i “trappiti” (frantoi) sorsero sulle rovine dei granai d’età messapica; Questi ambienti furono adattati, per dedicarsi al più complesso e redditizio commercio dell’olio. Il quale veniva soprattutto esportato verso le grandi città europee.
Ubicato in via Roma 12 sotto le abitazioni cinquecentesche, la struttura ipogea è interamente scavata nel banco calcarenitico. Edificato nel secolo XV fu attivo sino ai primi decenni del secolo scorso.
