★ ★ ★ ★ ★ parmigiano reggiano Colla 40 mesi sottovuoto, venduto al supermercato, si presenta con pasta liscia e molto umida, 40 mesi? forse 40 mesi sottovuoto che non vuol dire stagionato, la pasta si dovrebbe presentare ruvida e asciutta, granulosa, sabbiosa in bocca. Un altro carattere tipico del Parmigiano Reggiano è la struttura "a scaglia": la pasta, nel prodotto maturo, si stacca a lingue sottili secondo una disposizione a raggi convergenti verso il centro della forma. Perché il Parmigiano possa definirsi di qualità la sua pasta deve sbriciolarsi e poi sciogliersi in bocca. Non deve avere né un sapore piccante né amaro, ma essere gustoso e con un aroma intenso. Non mi risulta sul Colla 40 mesi.
