Prodotti di qualità, freschezza dei tagli, profumi di preparati, sapientemente dosati dalla moglie del signor Gerardo, sono solo alcuni dei motivi per cui vale la pena farci una visita. Di questi tempi poi, con l'avvicinarsi del periodo invernale, sicuramente poco gradito ai maiali, la sua macelleria comincia a riempirsi di stupende soppressate, salsicce ai semi di finocchietto, pancette che emanano un profumo di bontà dal loro incarto stretto con cordine che ne impediscono lo srotolamento e, sembra, anche la fuoriuscita del loro profumo. Formaggi stagionati e semi, dalle provenienze più genuine e infine il clou, il "guanciale". Ne ho provati tantissimi e di varie parti d'Italia, il norcino, il toscano, il friulano ma, quello del signor Gerardo li supera tutti, per qualità, stagionatura, profumo e, perché no, in bellezza. Il guanciale Cicalese è il re per i magnifici piatti della tradizione romana e laziale in genere e per tutti quei manicaretti regionali che come ingrediente principe reclamano il guanciale. In tutto questo non dimentichiamo le carni "fresche". Buonissime bistecche sapientemente frollate al punto giusto per goderne appieno i sapore e la bontà. Per ultimo, ma assolutamente non ultimo, anzi, la pulizia. L'igiene la noti non appena entri nel locale, è al primo posto. Sembra più un laboratorio medico che una macelleria e questo, per me, rappresenta la lode alle cinque stelle. Se vi trovate da quelle parti, fateci una scappata, non lo lascerete più. Seasoned cheeses and seeds, from the most genuine origins and finally the highlight, the "guanciale". I have tried many and from various parts of Italy, the butcher, the Tuscan, the Friulian but, that of Mr. Gerardo surpasses them all, for quality, seasoning, perfume and, why not, in beauty. The Cicalese guanciale is the king for the magnificent dishes of the Roman and Lazio tradition in general and for all those regional delicacies that claim the guanciale as the main ingredient. In all this, let's not forget "fresh" meats. Delicious steaks expertly matured at the right point to fully enjoy their flavor and goodness. Last but not least, indeed, the cleanliness. You notice hygiene as soon as you enter the room, it comes first. It looks more like a medical laboratory than a butcher's shop and that, to me, represents five-star praise. If you find yourself in those parts, take a trip, you will never leave it.
