Azienda modello, veramente ordinata. Formaggio non male ma la cosa che non tollero è quella che fanno pagare il peso della plastica del sottovuoto al prezzo del formaggio e alle mie rimostranze mi è stato risposto che li fanno così. ?? Inoltre è la prima volta (ma non opinabile) che di fronte ad una spesa di oltre cento euro mi fanno pagare una ricottina da 500 grammi Mah...

Bellissima esperienza, sono state aperte 3 forme di stagionatura diverse esattamente da 31 e 44 mesi. Peccato che non si possono trasmettere i profumi che si sono liberati con l'apertura. Il sapore è eccezionale.

Azienda familiare produttrice di parmigiano reggiano ben strutturata ed organizzata. Il formaggio è di ottima qualità in tutte le stagionature. Rapporto qualità prezzo molto interessante. Consiglio di provarlo, vale la pena.
well-structured and organized family company producing Parmesan. The cheese is of excellent quality in all ages. Very interesting value for money. I recommend trying it, it's worth it.

Must see!!! If you are in Emilia Romagna region, tour on this farm you will never forget. Young guy that showed us everything is very friendly, showed and explaned everything in details. This farm is special because they have complete production of their own. They have 500 cows ( it is interesting to see young cubs, couple days old), an have their own milk, so whole process is controlled by them. They will explain and walk you trough each step in making parmigiano. It is fantastic. Their 3 milkmen make 20 weels of parmigiano each day (each week weights about 42kg), but it needs to mature for minimum 12 months. It is recommended to rest 24-30 months. They will show you the aging room- it is spectacular. At the end, you will taste 12, 24, and 30 month old parmigiano, and easily see the difference. You will learn difference between 1st category- parmigiano, 2nd- rigatto, and 3rd category- sbiancato cheese. Only cheese made in Emilia Romagna region from cows' milk from this very region can have name Parmigiano Reggiano. If it is made in other region, or from cows' milk from other region, it is Grana Padano.
