Spero che anche in futuro, seppur crescendo nelle dimensioni, possiate rimanere un'azienda che fa un prodotto sano senza seguire in modo eccessivo le indicazioni della scienza enologica. Sono agronomo e ho bevuto tanti altri vini dell'Irpinia. In tanti vini non si ritrova più la naturalità proprio perché si fa un eccessivo ricorso a tutto quello che prevede la moderna enologia. Nel vostro vino ritrovo il gusto del vino sano. Anche la scelta di non rincorrere le denominazioni (doc, docg) credo sia nella stessa filosofia aziendale di fare un prodotto sano, senza spingere sulla tecnica enologica. Non rincorrendo il marchio doc, docg l'azienda risparmia i costi dovuti alla denominazione. In tale modo il consumatore paga meno la bottiglia ma, da quanto constato con l'assaggio, avendo sempre un ottimo vino che nel gusto ricorda e fa onore al grande vitigno da cui deriva. I am an agronomist and I have drunk many other Irpinia wines. In many wines, naturalness is no longer found precisely because excessive use is made of everything that modern enology provides. In your wine I find the taste of healthy wine. Even the choice not to run after the denominations (doc, docg) I believe is in the same company philosophy of making a healthy product, without pushing on the enological technique. By not chasing the doc brand, docg the company saves the costs due to the denomination. In this way the consumer pays less for the bottle but, from what I can see with the tasting, always having an excellent wine that in taste recalls and honors the great vine from which it derives.
