In particolare modo,sul trattamento delle carni pregiate d’eccellenza,selezionate e frollate in maniera autentica che conservano una giusta massa grassa distribuita tra i muscoli che conferisce alla carne venature bianche che ricordano il marmo. Dopo averle dedicato la giusta cottura,si apprezza l’autenticità dei sapori inconfondibili dell’altissima qualità del prodotto stesso. Ho riscontrato altresì,Altissima qualità sui prodotti stagionati,quali il prosciutto crudo di cinta senese,il lardo,il guanciale e tanti altri prodotti,trovati davvero saporiti. In the Carni & Salumi Gualano shop there is high professionalism and quality on all fresh and seasoned products. In particular, on the treatment of fine meats of excellence, selected and matured in an authentic way that retain the right fat mass distributed between the muscles that gives the meat white veins reminiscent of marble. After having dedicated the right cooking to it, you can appreciate the authenticity of the unmistakable flavors of the very high quality of the product itself. I also found very high quality on seasoned products, such as Cinta Senese raw ham, lard, bacon and many other products, found really tasty.

Avevo un po' abbandonato il pensiero che qui in zona potevo trovare carne di eccellente qualità, e invece mi sono ricreduto grazie alla serietà e professionalità della macelleria Gualano. Consiglio qualunque tipo di carne, dal bovino al pollo, dall'agnello al maiale. Questa macelleria è un posto "unico". I had given up the thought that here in the area I could find excellent quality meat, and instead I changed my mind thanks to the seriousness and professionalism of the Gualano butcher. Cottura con il reverse searing (passaggio in forno fino al raggiungimento dei 50 gradi al cuore, poi reazione di Maillard sulla piastra) e risultato spettacolare, grazie Salvatore :-) Appointment with the Butcher Gualano and with two fantastic Blue Marble steaks of 1 kg and a half each. Cooking with reverse searing (passage in the oven until the core reaches 50 degrees, then Maillard reaction on the plate) and spectacular result, thanks Salvatore :-)
